When you use ACT! to create a quote from an opportunity, ACT! uses the default quote template. While you can customize this template to some degree, you can only have one.  Select A Quote allows you to create any number of (differently named) templates and Select which one to use as the "default" template for the next "Create Quote" operation. For ACT! 2007 to the present.
